Fermentation Process:  Grind soaked beans separately, mix, and ferment for 8 hours. Add ginger chili paste, salt, and let the batter double in size.

Steaming Method:  Steam the batter in an idli pan until a toothpick comes out clean.

Curd Preparation:  Mix black salt, ginger paste, and roasted cumin powder in vegan curd.

Final Touch:  Soak idlis in vegan curd, layer with thick curd mix, and top with peanut or soy yogurt. Serve with date tamarind chutney, garnished with fresh coriander, chili powder, cumin powder, and salt.
