Vegetable Millet Dosa Recipe for Diabetes

Ingredients:  1 cup millet flour (any variety like pearl millet or finger millet) 1/4 cup finely chopped onions 1/4 cup grated carrots 1/4 cup chopped spinach 1/2 teaspoon cumin seeds Salt to taste Water (as needed for batter)

Mix Ingredients:  In a bowl, mix millet flour with finely chopped onions, grated carrots, chopped spinach, cumin seeds, and salt.

Add Water:  Gradually add water to form a thin batter. The consistency should be similar to that of regular dosa batter. Allow it to rest for 10 minutes.

Heat Griddle:  Heat a non-stick griddle or dosa tawa.

Pour Batter:  Pour a ladle full of batter onto the hot griddle, spreading it into a thin, circular shape.

Drizzle Oil:  Drizzle a few drops of oil on the dosa for crispiness.

Cook Both Sides:  Cook until the edges are golden brown, then flip and cook the other side.

Serve Hot:  Serve the diabetic-friendly Vegetable Millet Dosa hot with a side of mint chutney or a low-fat yogurt.
