Spinach and Mushroom Soup for Diabetes

:  Ingredients:  1 lb mushrooms, sliced 1 onion, chopped 3 cloves garlic, minced

6 cups vegetable broth (low-sodium) 1 teaspoon thyme 4 cups fresh spinach

Salt and pepper to taste Lemon juice (optional)

Instructions:  Sauté mushrooms, onions, and garlic until mushrooms release their moisture.

Add vegetable broth, thyme, salt, and pepper. Simmer for 10-15 minutes.

Stir in fresh spinach until wilted. Add lemon juice if desired.
