Red Lentil Soup for Diabetes

Ingredients: 1 cup dry red lentils, rinsed 1 large onion, finely chopped 2 carrots, diced

2 celery stalks, diced 3 cloves garlic, minced 1 can (14 oz) crushed tomatoes

6 cups low-sodium vegetable broth 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper (adjust to taste) Salt and pepper to taste 2 tablespoons olive oil Fresh cilantro for garnish (optional)

Instructions: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until vegetables are softened.

Add minced garlic and sauté for an additional minute until fragrant.

Stir in red lentils, crushed tomatoes, vegetable broth, cumin, coriander, turmeric, cayenne pepper, salt, and pepper.

Bring the soup to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes or until lentils are fully cooked.
