Mushroom and Barley Soup for Diabetes 

Ingredients:  1 cup barley, rinsed 1 lb mushrooms, sliced 1 onion, chopped

2 carrots, chopped 2 celery stalks, chopped 3 cloves garlic, minced

6 cups vegetable broth (low-sodium) 1 teaspoon thyme Salt and pepper to taste Chopped parsley for garnish

Instructions:  Sauté onions, carrots, celery, and garlic until softened.

Add barley, mushrooms, vegetable broth, thyme, salt, and pepper.

Simmer until barley is tender. Garnish with chopped parsley before serving.

Contains beta-glucans from barley, which may help regulate blood sugar levels, and mushrooms provide antioxidants that support overall immune function.
