Diabetic Friendly Vegetable Jowar (Sorghum) Roti

Ingredients:  1 cup Jowar flour 1/2 cup mixed vegetables (finely grated carrots, chopped spinach, and any other preferred veggies) Water (as needed for kneading) Salt to taste 1/2 teaspoon cumin powder (optional)

Instructions:  Prepare the Vegetables:  Finely grate carrots, chop spinach, or use any other preferred vegetables. Ensure they are finely chopped or grated for even distribution in the roti.

Make the Dough:  In a bowl, combine Jowar flour with the mixed vegetables. Add a pinch of salt and cumin powder if using.

Gradually Add Water:  Gradually add water and knead the mixture into a soft and pliable dough. Adjust water as needed.

Divide the dough into small, lemon-sized balls.  Take a ball, dip it in dry Jowar flour to prevent sticking, and roll it out into a thin roti on a clean surface.

Cook the Rotis:  Place the rolled-out Jowar roti on the hot griddle. Cook for a minute or until you see bubbles forming. Flip and cook the other side until it puffs up and has golden brown spots.

Serve Hot:  Serve the vegetable Jowar rotis hot with a side of low-fat yogurt or a diabetic-friendly chutney.
