Diabetic Friendly Moong Dal Halwa

Prepare Moong Dal:  Grind soaked moong dal into a coarse paste using minimal water.

In a pan, heat 2 cups of water. Add the moong dal paste and cook on low heat until it thickens, stirring continuously.

Add Ghee:  Add ghee or coconut oil to the thickened moong dal. Continue to cook on low heat.

Add Almond Flour:  Stir in almond flour or almond meal, ensuring it's well combined with the moong dal mixture.

Sweeten:  Add stevia or your preferred sugar substitute. Adjust sweetness according to taste.

Flavorings:  Add cardamom powder and saffron strands (if using). Mix well.

Cook Until Ghee Separates:  Continue cooking until the mixture thickens, and ghee starts to separate from the sides.

Add Nuts:  Stir in chopped nuts (almonds, cashews, or pistachios) for added texture.
