Diabetic Friendly Millet Uttapam Recipe

Ingredients:  1 cup millet flour (any variety like pearl millet or finger millet) 1/4 cup finely chopped onions 1/4 cup finely chopped tomatoes 1/4 cup grated zucchini 1/4 cup chopped bell peppers (any color) 1/2 teaspoon cumin seeds Salt to taste

Instructions:  Mix Ingredients:  In a bowl, mix millet flour with finely chopped onions, tomatoes, grated zucchini, chopped bell peppers, cumin seeds, and salt.

Add Water:  Gradually add water to form a thick batter. Allow it to rest for 10 minutes.

Heat a non-stick griddle or tawa.  Pour a ladle full of batter onto the hot griddle, spreading it into a circular shape.

Add Toppings:  Sprinkle some extra chopped onions, tomatoes, and bell peppers on top.

Cook Both Sides:  Cook until the edges are golden brown, then flip and cook the other side.

Serve Hot:  Serve the diabetic-friendly Millet Uttapam hot with a side of mint chutney or low-fat yogurt.
