Diabetic Friendly Broccoli Soup Recipe

Ingredients:  2 cups broccoli florets 1 onion, chopped 2 cloves garlic, minced

1 carrot, chopped 1 celery stalk, chopped 1 tbsp olive oil

1/2 tsp dried thyme Salt and pepper to taste 1/2 cup almond milk

Instructions:  Sauté onion, garlic, carrot, and celery in olive oil until softened.

Add broccoli, thyme, salt, and pepper. Stir for 2-3 minutes.

Pour in vegetable broth, bring to a boil, then simmer for 15-20 minutes.

Blend until smooth. Add milk for creaminess if desired. Adjust consistency and serve hot.
