Diabetic Friendly Baked Gujiya Recipe

Ingredients:  2 cups whole wheat flour ¼ cup ghee 1 cup desiccated coconut

½ cup chopped cashews ¼ cup chopped pistachios ¼ cup raisins 1 tsp saffron strands

2 tsp cardamom powder 1½ cup jaggery powder ¼ tsp salt 2-3 tbsp milk

For garnishing: 1 tbsp chopped pistachios

Instructions:  Make a soft dough by mixing flour, ghee, salt, and lukewarm water. Set aside covered. Roast desiccated coconut, nuts, and raisins in ghee. Let it cool.

Mix roasted ingredients with jaggery, saffron, and cardamom powder. Roll dough, fill with mixture, seal, and cut out excess dough.

Place gujiyas on a baking tray, brush with milk, and bake at 200°C for 15-20 minutes. Garnish with pistachios and serve. Enjoy your healthy baked gujiyas!
