Diabetic Friendly Avocado Toast Recipe

Ingredients:  1 slice whole-grain or multigrain bread 1/2 ripe avocado 1 teaspoon lemon juice Salt and pepper to taste

Optional toppings: cherry tomatoes, radish slices, chia seeds, or a sprinkle of red pepper flakes

Instructions:  Toast the Bread:  Toast the whole-grain or multigrain bread slice to your liking.

Prepare the Avocado:  While the bread is toasting, mash the ripe avocado in a bowl. Add lemon juice, salt, and pepper. Mix well.

Spread Avocado on Toast:  Once the bread is toasted, spread the mashed avocado evenly over the surface.

Add Toppings:  Add your choice of toppings, such as cherry tomatoes, radish slices, chia seeds, or a sprinkle of red pepper flakes.

Season Again (Optional):  If desired, season the toppings with a bit more salt and pepper.
