Diabetes Friendly Narkel Naru Recipe

Ingredients:   2 Cups Fresh Grated Coconut 2 Tbsp Finely Chopped Dates Stevia Drops ½ Tsp Cardamom Powder (Optional) 2 Tsp Coconut Oil

Roasting Coconut:   Heat Kadai, add 1 tsp coconut oil, roast grated coconut on low flame for 4-5 mins, without browning.

Adding Dates and Stevia:   Mix in chopped dates and stevia, cook for 6-7 mins until dates melt and the mixture thickens.

Testing Ladoo Mixture:  Check by forming a tiny ladoo. If it shapes easily, the mixture is ready. Avoid overcooking to prevent hardness.

Flavoring:   Switch off flame, add cardamom powder, mix well, and let it cool completely.

Forming Ladoos:   Divide into 8 equal-sized balls. With oiled palms, roll each ball to make ladoos.

Storage:   Store in an airtight container, refrigerate.
