Lemon Rice:  A zesty dish featuring the tanginess of lemon, aromatic spices, and the nuttiness of roasted peanuts.

Ingredients:  Coriander seeds, oil, mustard seeds, curry leaves, green chilies, ginger, roasted peanuts, turmeric powder, lemons, and cooked brown basmati rice.

Coriander Powder:  Gently roast and coarsely grind coriander seeds for a fragrant spice blend.

Tadka:  Heat oil, add mustard seeds, curry leaves, and green chilies. Fry until the spluttering stops.

Addition:  Introduce ginger and roasted peanuts, frying until aromatic.

Add turmeric powder, turn off the burner, and mix in lemon juice for a burst of citrus flavor.

Combine the cooked brown basmati rice with roasted coriander powder, salt, and the prepared tadka mixture. Mix well for a delightful lemon rice.

Variation Options:  Experiment with different grains by replacing rice with millets (Proso/Foxtail/Kodo) for a diverse and nutritious twist.
