Diabetes Friendly Cucumber Salad Recipe

Quick Prep: Cucumber salad takes only 10 minutes to prepare, making it a fast and easy option.

Ingredients:  1 cup finely chopped cucumber 1/4 cup chopped coriander 1 tbsp coarse roasted peanuts powder 1 tbsp roughly chopped roasted peanuts 1/4 tsp minced chilies Tadka of jeera (cumin seeds) and hing (asafoetida) Salt to taste 2 tsp lemon juice

Preparation:  Mix cucumber, coriander, green chilies, and lemon juice. Top with chopped peanuts, peanut powder, and salt. Heat 1 tsp oil, add jeera; when it splutters, add hing, then pour this tadka over the salad. Just before serving, mix and add 2 tsp pumpkin seeds on top.
