Black Bean Soup for Diabetes 

Ingredients:  2 cans (15 oz each) black beans, drained and rinsed 1 onion, chopped

2 bell peppers (any color), diced 3 cloves garlic, minced 1 can (14 oz) diced tomatoes (low-sodium)

4 cups vegetable broth (low-sodium) 1 teaspoon cumin 1 teaspoon chili powder

Dash of cayenne pepper (adjust to taste) Salt and pepper to taste Fresh cilantro for garnish

Instructions:  Sauté onions, bell peppers, and garlic until softened. Add black beans, diced tomatoes, vegetable broth, cumin, chili powder, cayenne pepper, salt, and pepper.

Simmer for 20-30 minutes. Garnish with fresh cilantro before serving.
