Diabetes Friendly Lobongo Latika Recipe

Ingredients: Khapli/Emmer wheat, Vegan Curd, Oil, Coconut oil, Cooking Soda, Cloves, Water, Coconut, Cashews, Almonds, Pistachios, Date Syrup, Cardamom Powder, Saffron.

Dough: Mix sifted wheat flour, baking soda, margarine, oil, and vegan curd. Knead into a soft dough, rest for 15 min.

Filling: Cook coconut, dates, and chopped nuts until golden.

Assembly: Roll dough into circles, add filling, fold into squares, seal with cloves.

Air Frying: Fry folded packets until golden in the air fryer.

Date Syrup: Boil water with deseeded date, saffron, and cardamom powder until syrup reaches one-string consistency.

Final Touch: Immerse fried packets in date syrup for 1 min, cool on a tray, and store in an airtight container. Consume 1 piece daily, especially if sugars are well-controlled.
